Vegan Korean Hot Chicken Noodles
These Vegan Korean Hot "Chicken" flavoured Noodles are super easy and fast to cook for an easy and convenient snack or add protein and veggies to make it a meal.
Use ready to eat noodles (like shirataki noodles) to make this in 5 minutes or use your favourite ramen noodles.
Ingredients
- 200g shirataki noodles (or your favourite cooked ramen)
sauce:
- 1 tbsp Korean Red Pepper Paste (gochujang)
- 1/2 cube vegan chicken broth cube (or equivalent paste/powder for 1 cup of broth)
- 1/2 tsp nutritional yeast
- 1/4 tsp dark soy sauce
- 1/4 tsp Korean Red Pepper Powder (gochujaru)
- 1/4 tsp sugar or 1:1 sweetener
- 1/8 tsp garlic powder
- 1/8 tsp onion powder
- 1/8 tsp curry powder
- 1/8 tsp msg crystals
garnish:
- 1 tbsp chopped green onion
- 1/4 tsp toasted sesame seeds
- 1/8 tsp nori confetti
Instructions
- Mix all the sauce ingredients together in a pan. Stir in 3 tbsp of water until smooth. Heat until just bubbling.
- If using shirataki noodles, rinse multiple times. Regardless of the type of cooked noodles, drain them before adding to the sauce. Continue to stir-fry for a couple minutes until excess liquid has evaporated. Optionally, add sesame oil to taste.
- Plate the noodles, add your toasted sesame seeds, nori and chopped green onion, and enjoy!
