Traditional unagi is freshwater eel glazed with a sweet soy-based sauce. Why Chinese Eggplant Works Best

Chinese eggplants are long and slender, making them ideal for air fryer cooking. Their thinner shape allows them to soften quickly while maintaining an attractive presentation.

Look for an eggplant with smooth, shiny skin and a relatively uniform width from end to end. An eggplant around 11 inches long fits comfortably in a 9″ by 9″ air fryer basket.

Don’t skip poking a few holes before cooking. As amusing as it sounds, eggplants can build up steam pressure while roasting, and a few knife tip or fork holes prevent any unexpected eruptions.

The Secret to Protein-Packed Fried Rice

Many vegetable-based fried rice recipes can feel more like a side dish than a complete meal.

Grating extra-firm tofu directly into the rice solves that problem. As it cooks, the tofu blends into the rice and absorbs all the surrounding flavors. Most people won’t even notice it’s there, but it significantly boosts the protein content and makes the meal much more satisfying.

Using half cauliflower rice also lightens the dish while adding extra vegetables without sacrificing texture.

Tips for the Best Results

  • Allow the eggplant to cool slightly before slicing and glazing. It will be much easier to handle.
  • Arrange the bok choy with the leafy ends facing inward. The leaves cook more quickly than the stems so this prevents crispy leaves turning into burnt ones.
  • Reserve some glaze for the final broiling step. The second layer creates a beautifully sticky, caramelized finish.
  • If your air fryer doesn’t have a broil function, simply continue air frying at the highest temperature available until the glaze darkens and bubbles.

Air Fryer Eggplant Unagi with Charred Bok Choy & Fried Rice

This Air Fryer Eggplant Unagi dinner brings together silky glazed Chinese eggplant, charred bok choy, and savory fried rice for a complete plant-based meal made entirely in one air fryer basket. Easy to cook in an air fryer and clean up afterwards; perfect for weeknights.

Ingredients

Eggplant "Unagi"

  • 1 Chinese eggplant (11" long)
  • 1 tbsp mirin (of 2 tsp sake or other rice wine + 1 tsp sugar)
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1/2 tsp vegetable bouillon or mushroom seasoning

Charred Bok Choy

  • 2 large baby bok choy (as much as you like for 2 servings)
  • 1 tsp olive oil
  • 1 clove garlic, grated
  • 1/4 tsp salt

Air Fryer Fried Rice

  • 1 cup frozen cooked jasmine rice
  • 1 cup frozen cauliflower rice
  • 1/2 block (175g) extra firm tofu
  • 1/4 cup frozen peas
  • 1/4 cup fresh or frozen corn kernels
  • 2 tbsp water
  • 2 - 3 tsp mushroom stir-fry sauce (AKA vegan oyster sauce) to taste
  • 1/8 - 1/4 tsp white pepper to taste

Garnish

  • sliced green onions
  • toasted white sesame seeds
  • toasted black sesame seeds

Instructions

    1. Air Fry the Eggplant

    Pierce the eggplant several times with a fork. Air fry at 400°F (200°C) for 12 minutes, or until very soft.

    Meanwhile make the Unagi Sauce and prepare the Bok Choy.

    2. Make the Unagi Sauce & Prep Bok Choy

    Whisk together all unagi sauce ingredients in a small bowl. Set aside.

    Cut the bok choy into quarters and rinse well between the layers. Pat dry. Spray or brush the bok choy with oil. Add garlic and salt and massage to distribute. Set aside.

    3. Remove Eggplant

    The eggplant will be very soft and very hot. Carefully transfer to a cutting board with tongs. Remove the crisper plate with tongs.

    4. Start the Fried Rice

    Lightly oil the air fryer basket. Add the frozen rice, cauliflower rice, peas, corn, grated tofu, and water.

    Cook using the Reheat function (or 350°F/175°C) for 5 minutes.

    5. Finish the Fried Rice

    Stir the rice mixture. Add mushroom stir-fry sauce (vegan oyster sauce) and white pepper to taste.

    Air fry at 400°F (200°C) for 3–5 minutes, stirring once, until hot and lightly crisped.

    Transfer to small bowls, cover with serving plate and flip. Keep the bowl in place to keep the rice warm.

    6. Prepare the Eggplant

    Once cool enough to handle, split the eggplant lengthwise. Score the flesh across the length.

    Brush generously with unagi sauce, reserving 2 tablespoons for later.

    7. Cook the Bok Choy and Eggplant

    Rinse the air fryer basket and replace the crisper plate. Arrange the bok choy with the leaves facing inward.

    Place the eggplant on top of the bok choy leaves. Air fry at 400°F (200°C) for 5 minutes.

    8. Caramelize the Glaze

    Brush the eggplant with the remaining sauce. Broil at 450°F (230°C) for 4 minutes, or until the glaze is sticky and bubbling.

    9. Serve

    Remove the bowls from the plates, Top with the roasted bok choy and eggplant.

    Garnish with sliced green onions and toasted white and black sesame seeds. Enjoy!
