Ingredients

Wet Ingredients

  • 205 ml lukewarm water
  • 75 g cashew pieces (½ cup + 1 scant tbsp)
  • 35 g brown sugar (3 tbsp)

Dry Ingredients

  • 225 g whole wheat flour (plus extra for handling)
  • 1 ½ tsp instant yeast (4 g)
  • Salt (as needed — include if you want me to match your original formula exactly)

Fat & Finish

  • 1 heaping tbsp softened vegan butter or refined coconut oil (18 g)
  • Reserved cashew milk (from wet ingredients)

Instructions

  1. Blend liquid
    Blend water, cashews, and sugar until smooth. Strain. Reserve 3 tbsp for brushing.
  2. Make dough
    Mix flour, yeast, and salt. Add strained liquid and stir into a shaggy dough.
  3. Knead
    Knead in vegan butter until fully absorbed. Use lightly wet hands to form a ball.
  4. First proof
    Cover bowl tightly. Proof in air fryer at 90°F for 30 min.
  5. Shape
    Divide into 8 pieces. Fold, pinch, and roll into tight balls.
  6. Second proof
    Arrange in parchment-lined 7.25” pan. Proof at 92°F for 20 min.
  7. Bake
    Air fry at 350°F for 10 min.
  8. Finish bake
    Brush with cashew milk. Bake at 330°F for ~12 min, until 190°F internal temp.
  9. Serve
    Remove immediately. Serve warm.

Notes

This recipe was designed for the Cosori TurboBlaze which has BAKE and PROOF settings. If your air fryer doesn't, instead heat air fryer for 30 seconds to warm it up then PROOF with it off. For the baking portion, AIR FRY at 330°F for 25 minutes or until internal temperature is 190°F.
