Can I make this less spicy?

Absolutely. Reduce the cayenne pepper or hot sauce in the Nashville glaze and increase it later if desired.

Can I use extra-firm tofu?

It won’t soak up the marinade as well. But if it’s all you have, go for it. I recommend making the marinade stronger in that case.

What should I serve with Nashville hot tofu?

Air Fryer Nashville Hot Chicken Tofu, Corn Ribs & Biscuits

Make a complete meal of Nashville Hot Chicken-style Tofu with Corn Ribs and Biscuits in your air fryer. NOTE: I used the Cosori TurboBlaze; you may need a few extra minutes of cook time with other air fryers.

Ingredients

  • 2 blocks (700 grams) medium firm tofu, previously frozen
  • 1 cob of corn, husk and silks removed
  • 1 can of biscuits (like Pillsbury or similar)

Chickenish Marinade

  • 1/3 cup dill pickle brine (80ml)
  • 2 tbsp brown sugar
  • 2 tbsp Louisiana Hot Sauce
  • 1 tsp veg bouillon powder
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried basil
  • 1/4 tsp black pepper

Corn Rib Seasoning

  • 2 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/4 tsp salt

Seasoned Flour

  • 1 cup all-purpose flour (see notes for best results)
  • 1 tsp salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp white pepper
  • 1 cup crispy rice cereal

"Egg" Wash

  • 3/4 cup chickpea flour
  • 3/4 cup ice cold water

Plate

  • 4 slices Texas Toast
  • 1/2 cup sliced dill pickles

Instructions

    1. Prepare the tofu

    Press the thawed tofu between two cutting boards to squeeze out excess water. Tear into 2- or 3-bite nuggets. Pat dry with a clean, lint-free kitchen towel.

    In a large container, mix all marinade ingredients. Add the tofu pieces in a single layer, with the original cut sides facing up (this helps prevent breakage). Gently press down so the tofu absorbs the marinade. Set aside.

    2. Make the corn ribs

    Use caution—this step can be tricky.

    With a sharp chef's knife or cleaver, cut each corn cob in half across the middle.

    Stand one half upright on a flat end. Cut it lengthwise in half. It helps to rock the knife into the cob first, then press firmly down. Cut each half again to make 4 long wedges.

    In a small plate, mix the corn rib seasonings.

    Place the corn ribs in a large bowl and spray with oil until well coated. Press each corn rib into the seasoning mixture until coated on all sides. Set aside.

    3. Bake the biscuits

    Preheat the air fryer to 400°F for 4 minutes.

    Place the biscuits directly on the crisper plate.

    Air Fry: 400°F for 5 minutes

    The biscuits should be golden on the outside and fluffy inside. Set aside.

    4. Prepare the flour coating

    Mix all Seasoned Flour ingredients except the crispy rice cereal.

    Set aside.

    5. First coating

    Working a few pieces at a time, remove the tofu from the marinade and coat lightly in the seasoned flour. Shake off any extra flour. Place the coated pieces on a plate or baking sheet.

    For the small tofu bits, coat them in flour as well. Shake off excess flour, then gently squeeze small handfuls together to form clusters. Place on the plate.

    6. Prepare 2nd & 3rd coating

    Add the crispy rice cereal to the remaining seasoned flour. Crush the cereal with your hands and mix.

    In a bowl, whisk together the chickpea flour and water until smooth to make the vegan egg wash.

    Starting with the tofu pieces you coated first:

  • Dip into the vegan egg wash.
  • Let excess drip off.
  • Coat in the flour-and-rice-cereal mixture.
  • Gently press the coating onto the tofu.

Return each piece to the plate.

When all pieces are coated, spray all sides with oil until no dry white spots remain.

7. Air fry the tofu and corn ribs

Preheat the air fryer to 400°F for 4 minutes.

Arrange the tofu nuggets on the crisper plate in a single layer without touching. About 75% of the nuggets will fit in a 9-inch × 9-inch basket.

You can cook the remaining nuggets in a second batch or freeze them for later.

Spray the tops with oil.

Air Fry: 400°F for 8–10 minutes

Flip the nuggets and move them to one side of the basket. Add the corn ribs. It's okay if pieces touch or overlap slightly now.

Air Fry: 400°F for 10 minutes more

8. Make the Nashville hot oil

While the tofu cooks, melt the vegan butter in a small saucepan.

Whisk in the seasonings. Heat just until the mixture starts to bubble, then remove from the heat.

9. Assemble and serve

Place the tofu nuggets on the Texas toast. Brush generously with the Nashville hot oil. Top with plenty of pickles. Serve with the corn ribs and biscuits. Enjoy!

Notes

For the Seasoned Flour, I found gluten-free 1:1 baking flour works the best for a lighter, crispier crust. To imitate the effect with regular AP flour, use 1 cup regular all--purpose with 1/4 cup cornstarch.
