This evening, I was feeling particularly lazy and felt like tortilla wraps. But, alas, I had no tortillas. So I decided to make some. Never mind that I have never successfully accomplished that before. So I googled “tortilla recipes” like any other self-respecting Gen Y-er. However, all the recipes looked too complicated and required shortening, which I didn’t have on hand. So I decided to wing it. And boy did I FLY…figuratively, of course.
This recipe makes enough for one hungry Mary or two normal people. These tortillas were exceptionally easy to make, took about ten minutes from start to finish, and tasted soft and delicious. I hope you try it!
Vegan Flour Tortillas
Prep Time: 15 minutes
Makes 4 8″ tortillas
Ingredients
1 cup white flour
1 tsp salt
1/2 tsp sugar
1/2 tsp baking soda
2 tbs oil (I used canola)
about 1/4 cup water
Directions
Mix the dry ingredients together in a mixing bowl. Add the oil and water, then quickly whisk together with your fingers. Squeeze the ingredients together until it forms a stiff dough. Add more water, little by little, if needed.
Kneed the dough until smooth and elastic. Wrap it up in plastic or place in a greased bowl with a damp cloth on top. At this point, you should let it rest for at least 5 minutes. You can get away with not doing this step, but I found the dough easier to roll out after resting it. Apparently, this makes it taste better too.
After resting, divide the dough up into four equal parts. Form each piece into ball. On a clean surface, roll out the dough with a rolling pin until it is VERY thin. Repeat with all pieces.
Place a non-stick pan on the burner and turn to medium heat. When the pan is hot, place one tortilla. Cook each side about 1-2 minutes. You’ll know it’s done when the colour turns from opaque to white. Repeat with the remaining tortillas.
Fill the tortillas right away with anything you want and nom nom nom! BAM! Dinner/lunch for lazy people.
