Vegan Tofu Katsu on Rice for One

Crispy tofu katsu and homemade vegan katsu sauce with a side of steamed rice and finished with rich vegan mayo make this meal delicious and satisfying!
While this recipe is made for the air fryer, you should be able to bake or pan-fry the tofu katsu too. Stay tuned for updates on those methods!
Ingredients
- 1/2 lb firm tofu (225g)
- 1/2 cup uncooked Jasmine Rice
- 1/2 cup shredded cabbage or lettuce
- 1 tablespoons vegan mayo
- oil spray
wet mix
- 1 tablespoons vegan mayo
- 1 tablespoon soy sauce
- 1/2 teaspoon minced garlic
- 1/2 teaspoon onion powder
dry mix
- 1/2 cup panko (Japanese bread crumbs)
- 1/4 teaspoon salt
- 1/4 teaspoon white pepper
- 1/4 teaspoon MSG (optional)
- 1/4 teaspoon sugar or erythritol sweetener
Vegan Katsu Sauce
- 1 tablespoon ketchup
- 2 teaspoons sugar or sweetener
- 1 tsp vegan worcestershire sauce
- 1 tsp Chinese mushroom stir-fry sauce (vegan oyster sauce)
Instructions
Start cooking your rice first with 2/3 cups plus 1 tablespoon of water (see this page for how to cook rice on the stove). Also, cut tofu into two thin wide slabs. Pat dry on all sides. Set aside on a clean, lint-free dry cloth.
Meanwhile, get a couple pieces of parchment paper cut to just a bit larger than the tofu pieces (have about 1cm extra on all sides). Also, mix the wet ingredients together on a plate. On a separate small plate, mix the dry ingredients together.
Coat each piece of tofu in the wet mixture. Then coat them in the dry mixture. Place each piece of tofu on the parchment you prepared earlier; it will make handling easier.
TO AIR FRY
Air fry at 400°F for 8 minutes then remove the parchment paper and continue to air fry an additional 6 to 8 minutes or until your tofu katsu are both golden brown. You could also choose to flip the katsu afrter the first 8 minutes for more even cooking.
By the time your tofu is done, your rice should also be ready.
MAKE KATSU SAUCE
While your tofu is cooking, mix all the katsu sauce ingredients together until smooth.
TO SERVE
Slice the tofu katsu into 1" wide pieces and place on bed of cabbage or lettuce. Add rice on the side and serve with katsu sauce and vegan mayo drizzled over as you like.
Notes
It's also possible to pan-fry or bake your tofu katsu for one but I have not timed those methods out yet. Please let me know if YOU do!
