A Vegan Keto Reset Day: Steamed Tofu Breakfast, Tangy Green Dip & Lupini Pasta Review
Hey friends and not-yet-friends! This day started with a late breakfast and ended with some solid kitchen resets to help me get back on my vegan keto game. If you’ve been following along on Instagram, you already know I’ve been obsessed with this breakfast lately—steamed silken tofu over greens with mung beans and the most addictive umami sauce. Here’s how it went down, plus a few kitchen preps, taste tests, and one surprisingly decent keto pasta.
Steamed Silken Tofu Breakfast Bowl
By the time I got home from errands, I was starving. I threw together my current favorite breakfast:

A handful of fresh spinach (pick off the yellow leaves!)

Some of the last of my home-sprouted mung beans

A generous scoop of silken tofu
This all goes into a steamer basket—no need for a fancy machine. Just use a wide pot with a trivet, and keep an eye on the water level. Steam it all together for about 15 minutes while you prep the sauce.
The Addictive Umami Sauce
This sauce makes the dish. Here’s what goes in:

About a tablespoon of Chinese preserved leaf mustard (sometimes labeled “preserved olive leaf” or “Chinese vegetable with olive”)

A tiny splash of balsamic vinegar

A few chili flakes
-
A dash of soy sauce
-
Flax oil for your omega-3s
Stir it all together and drizzle it over your freshly steamed tofu and veggies. It’s savory, slightly tangy, and that little bit of chili brings everything to life. Don’t toss the liquid from the bottom—it’s veggie broth gold. I sip on it like soup afterwards!
Fridge Reset & Veggie Prep
We had a bit of a pause due to a cat emergency (don’t worry, everyone’s okay now!), but the next day I got a grocery delivery and jumped right into prep.

Limp broccoli? No worries—we’ll cook it tonight.

Cauliflower leaves? Chop them up and treat them like cabbage in stir-fries.
A little effort now sets me up for easy, nourishing meals later.
Tangy Green Tofu Dip (No Nuts, All Flavor)
To prep a snack box sauce, I made a tangy, herby green dip using:

Extra firm tofu

A whole jalapeño

A couple of green onions

A small handful of parsley

A big handful of cilantro

Half an avocado

Flax oil

Apple cider vinegar

A squeeze of mustard

Water
Blend, taste, and adjust. I ended up adding:

1 ½ tsp salt

½ tsp black pepper

1 tbsp onion powder

A bit more vinegar
The result: a zippy, herbaceous dip with lemony brightness—perfect for raw veggie snacking.
Keto Vegan Cheese Sauce (No Cashews!)
With the rest of the tofu, I made a version of my classic vegan cheese whiz—only keto!
Instead of cashews, I used tofu and left out the sweetener. Normally, I’d add fenugreek leaves for a maple-y undertone, but they’ve vanished into the void of my reorganized spice cupboard. (Of course.)
This cheese sauce is perfect warm over broccoli, mixed into pasta, or even chilled as a sandwich spread. Full recipe linked in the description if you’re making it at home!
The Motivation Behind the Reset
Honestly, I’d fallen into a habit: cooking keto sides with good intentions but reaching for carbs when tired. I justified “just a little,” and it caught up to me—painful hands are always my wake-up call.

Taste Test: Lupini Bean Pasta
I’ve had this lupini bean pasta in my pantry for months. Reviews were mixed, so I waited until I had time and sauce on hand.
The cooking water turned yellow fast (lupini beans are known for bitterness), but I boiled it a bit longer to reach al dente.
Verdict:

On its own: bland, gummy, and a little scary.

With the vegan cheese sauce: totally fine! The texture isn’t perfect—it’s pasty, not chewy—but it works. Especially when hungry.
Compared to regular macaroni? No contest. But for a keto option that won’t flare up my joints, it’ll do just fine.
Bonus Taste Test: Beyond Steak
I’d been saving a pack of Beyond Meat’s steak for a special occasion, and this seemed like the time.
First impressions:

Smells mushroomy (in a good way!)

Looks like the seitan-based mock meats from Chinese Buddhist shops

Tastes beefy, with a rich umami and soft-but-bouncy texture
I paired it with some broccoli and bell pepper stir-fried in the same pan and just a little soy sauce. Next time, I’ll cook the veggies separately for better texture, but overall it was a hit.
Final Thoughts
This wasn’t the most glamorous meal prep, but it was deeply satisfying and exactly what I needed. The sauces made everything taste great. The reset helped me feel grounded and back in control.
