This dish comes together quickly and easily with the help of a spiralizer. However, this special equipment isn’t necessary! Just use a vegetable peeler. Or these days, with the popularity of low carb and vegetable-based noodles on the rise, you might find spiralized zucchini at your grocery store.
The ingredients are as follows:
- Raw Vegan Pasta:
- 1 lb zucchini (about 3 small)
- juice from 1/2 lime
- pinch salt
- Sauce:
- 8 ripe cherry tomatoes
- 2 dates, pitted
- 5 basil leaves (or more!)
- 1 tablespoon chives, finely chopped
- 1 clove garlic
Putting together your Tomato Basil Zucchini Noodles
First, you’ll spiralize the zucchini. If you don’t have a spiralizer, you can create pasta-like strips with a vegetable peeler by peeling strips lengthwise along the zucchini. At first, the zucchini noodles will be stiff and crunchy; how can they be eaten like pasta? Don’t worry; we’ll take care of that on the next step.
Toss the zucchini noodles in a bowl with the lime juice and salt. Just a little pinch of salt will draw moisture out of the “zoodles” letting them relax and become tender.
Separately combine the tomatoes, pitted dates, chives and garlic and blend. You can add salt to taste, but try it without first. You might be surprised!
Divide the noodles into 2 servings and top with the tomato sauce. Enjoy!

Instructions
- Spiralize the zucchini. If you don’t have a spiralizer, you can create pasta strips with a vegetable peeler by peeling strips lengthwise along the zucchini.
- Toss the zucchini noodles in a bowl with the lime juice and salt. Set aside.
- In a blender, combine the tomatoes, pitted dates, chives and garlic. You can add salt to taste, but I encourage you to try it without.
- Divide the noodles into servings and top with the tomato sauce.
