Vegan Rice Paper Croissants
Super crispy on the outside with soft mochi-like layers on the inside with a mild custard-like flavor.
Ingredients
- 15 round rice paper sheets
Vegan Egg Dip
- 300ml Just Egg (vegan liquid egg alternative)
- 150ml soymilk (or your favourite plant-based milk)
- 3 tablespoons sugar (or favourite 1:1 sweetener)
- 2 tablespoons vegan butter, melted
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- pinch of salt
Instructions
- Preheat oven to 375°F (if using oven). Mix all the Vegan Egg Dip together in a shallow dish.
- Soak one rice paper into the "egg dip", covering the surface of both sides. Let excess drip off before placing on large plate. Repeat with 4 more sheets, stacking them on the plate.
- Work quickly as the rice paper will soften and become increasingly difficult to handle. Cut a triangle into the stacked rice papers. Use the five layers from one side to lay along top of the triangle. Use the remaining five layers from the other side to lay horizontally along the short side of the triangle.
- Roll your triangle stack up and gently turn the sides in to resemble a crescent shape. Place on parchment paper and sprinkle top with a bit of salt and additional sweetener (if desired).
- Use a spatula to transfer the leftover "egg dip" from the plate back to your shallow dish. Repeat the process with the rest of the rice papers.
- Bake in preheated oven for 30 minutes or until the tops of your vegan keto crescent rolls are golden brown. OR air fry at 320°F for 35 minutes.
Notes
Watch your croissants near the end of the baking time so you can adjust according to your own oven/environment.
