Mini Vegan Waffles for One (with Berry Compote and Whipped Cream)

Fluffy mini vegan waffles with coconut whipped cream and easy berry compote make the perfect treat-yoself breakfast!
Ingredients
For Waffles
- 4 tablespoons all-purpose flour
- 1 teaspoon sugar or sweetener
- 1/4 teaspoon baking powder
- pinch of salt
- 5 tablespoons plant-based milk
- 1 teaspoon apple cider vinegar
- 1 teaspoon melted vegan butter or coconut oil
- 1/8 teaspoon vanilla extract
For Berry Compote
- 1/2 cup frozen berries
- 2 tablespoons sugar or sweetener
For Vegan Whipped Cream
- 1/2 cup coconut cream, cold (120g)
- 1 tablespoon icing sugar (or 2 teaspoons erythritol sweetener)
- 1/8 teaspoon vanilla extract
Instructions
Make the Toppings First
Heat berries and sugar together until the sugar is completely melted and mixture comes to a boil. Turn the heat down to a low simmer and continue to cook for a minute or two to thicken. Set aside to cool
In a (preferablly chilled) mixing bowl, combine the cold coconut cream, icing sugar OR sweetener, and vanilla extract. Beat until fluffy, then put in the fridge while you make waffles.
Make the Waffles
Preheat your mini waffle maker. Mix all the dry ingredients (flour, sugar, baking powder, salt) together in a mixing bowl. Separately mix the wet ingredients together. Add the wet mix to the dry and stir just until combined and no obvious dry pockets remain. Some lumps are okay; do not over-mix.
When your waffle maker is fully preheated, brush the grill plates with oil. Then add 2 to 3 tablespoons of batter to the middle of the lower grill plate. Close the clamshell to cook. The batter will spread out on its own and steam will release as your waffle cooks. When it stops, your waffle should be done.
Meanwhile, warm a plate by running under hot tap water, then dry it. Place your first cooked waffle there and cover with foil or a cloth to keep warm. Continue with the rest of your batter. Enjoy!

For Gluten-free
Use gluten-free one to one baking flour to replace the all purpose flour to make this recipe gluten-free.
For Sugar-Free
The sugar can be replaced with a one to one sugar-free alternative such as Erythritol or an Erythritol blend.
