I was inspired to make this chocolate cereal treat after seeing a demo by Purdy’s master chocolatier when they were promoting their new vegan like of chocolate bars earlier this month. And while you can use any vegan chocolate you like to make this recipe, the Purdy’s vegan mylk chocolate bar happens to be the perfect size to use.

Vegan Chocolate Peanut Butter Cereal Treat for One

In minutes you can make this crispy chocolate cereal treat with creamy vegan milk chocolate ganache topping. It's the perfect serving size for one!

Ingredients

For cereal bar

  • 15g vegan milk chocolate
  • 1 tablespoon peanut butter (or nut/seed/legume butter of choice)
  • 1 teaspoon refined coconut oil
  • 1/8 teaspoon vanilla extract
  • 4 tablespoons cereal of choice

For vegan milk chocolate ganache

  • 25g vegan milk chocolate
  • 1 tablespoon peanut butter (or nut/seed/legume butter of choice)

Instructions

    In a microwave-safe cup, combine 15g vegan milk chocolate, peanut butter, vanilla extract, and refined coconut oil. Microwave in 10-15 second intervals until just melted; about 30 - 40 seconds. Note that the chocolate may still hold its shape but will melt when stirred.
    Immediately add the crispy cereal and stir to combine.

    Tranfer mixture to a parchment-lined ramekin or muffin tin. Compress the chocolate cereal mixture evenly with the back of a spoon. Then chill in the freezer while you make the ganache.

    For the ganache, combine peanut butter and vegan milk chocolate in a microwave-safe cup and heat using 10 to 15 second intervals until it's just melted enough to stir together. Get the base from the freezer and immediately pour the ganache. Again use the back of a spoon to smooth out the top. Then chill in the freezer for 10 to 15 minutes until set. Enjoy!

Notes

If your nut butter is unsalted, add a small pinch to step 1.

If you're not ready to enjoy your chocolate cereal treat right away, cover it and store in the fridge.

    I made my own chocolate with cocoa nibs and froze so I plan to make this with that. Just need some rice cereal . Thanks for the recipes.
